Sustainable Gastronomy Day 2025: Tropical Heat Beer Chicken with Novice Kitchen

Today is World Sustainable Gastronomy Day, a moment to celebrate the way food connects people, planet, and progress. At Haller, we believe sustainability starts long before a dish hits the table. It begins with how we grow, harvest, and share our ingredients. That’s why we’re proud to present this Spicy Beer & Butter Chicken recipe in collaboration with our partners Novice Kitchen, a flavour-forward sauce brand founded by chef and food enthusiast Niyi, featuring Novice Kitchen’s Tropical Heat sauce, made with mangoes grown and harvested with sustainability in mind.

As founder Niyi puts it:

“A big reason for creating the Tropical Heat sauce was to help farm and harvest mangoes sustainably, so it’s only right to bring you this stunning recipe today.”

Spicy Beer & Butter Chicken

Ingredients: 

  • 2 Chicken legs

  • 2tbs Butter

  • 1tbs Tropical heat hot sauce 

  • 120ml Lager 

  • 1 carrot

  • 1 stick of Celery 

  • 1 Onion

  • 2tbs neutral oil

  • Salt

  • Parsley

Method:

  1. Dice the onion, celery and carrot into small pieces.

  2. In a frying pan add 2tbs neutral oil and heat this up on a medium heat 

  3. Season the chicken legs with a generous pinch of salt on the skin, before placing the chicken skin side down until golden and crispy all round but not fully cooked. Try not to move the chicken around too much. 

  4. Once the chicken is golden remove it from the frying pan and set aside. 

  5. In the same pan add in the onion, carrot and celery and let this sauté for a couple of minutes until translucent. 

  6. Pour in the beer into the frying pan and cook for 1 minute before placing the chicken back in skin side up, ideally you want the beer to just cover enough of the chicken leaving the crispy skin liquid free. 

  7. Let this cook for 15 minutes or until the chicken is fully cooked, add in the butter, tropical heat and some chopped parsley. 

  8. Turn the heat up and reduce the sauce until slightly thicker for maximum flavour. 

  9. Enjoy with some bread!
